Green peppercorns is the unmatured seed of "piper nigrum" the common pepper.
Green peppercorns has a taste and perfume that has no more the black one.
Its taste is less "agressive", more subtile in flavour. As unmature, the corn still contains all then it is more perfumed than black pepper. Green peppercorns has a very characteristic taste as no other spice.

Madagascar green peppercorn
At the contrary of other origins, Madagascar green peppercorns is traditionnaly cultivated along East Coast wild forests, protected by natural shade of a wild support tree as it was many years ago.

No chemicals or fertilizers are usually used as it is cultivated in small traditional areas by families.

Due to its characteristics, malagasy green peppercorns has been recognized by connoisers and "chefs" for being of superior quality, different, with a luxuriously taste and a soft flavour.

Green peppercorns was almost unknown abroad of Madagascar as its preservation as green was unsafe. CODAL at this time developed an original processing that maintain color, flavour and taste of this "unmatured" spice.

By the way, CODAL is among the very first processors of this product in the world and well known for its regular quality and its original recipe improved during many years.

How to use green peppercorn
Green peppercorns may generally take place of black pepper. But its applications in cooking are wider as it will combine with almost all dressings and sauces for meats, game meat, fish, crustaceous, etc...

Green peppercorns is used in traditional home cooking but also in industrial processing of mustard, sauces, dressings, patés, sausages, etc...

Gathered, sorted by hands, preserved at the naturalness from fresh green peppercorns in the 48 next hour of its harvesting, since more than 40 years, green peppercorns codal remain the first green peppercorns of Madagascar.
CODAL GREEN PEPPERCORNS is prepared from FRESH pepper without pre-processing, and canned in brine directly at production site without addition of preserves neither chemicals nor colourings.
