Do you know Green peppercorns?
Green peppercorns (le poivre vert) is the common pepper - piper nigrum -  but berries are harvested at unripe stage. Black pepper is from the same vine but matured and then dried. Fresher , green peppercorns remain with a green colour, a mellow appearance and  a milder texture. That is why its taste , its flavour, are more subtile than the black one.

Green peppercorns taste is warm of course, but less « agressive » than the black pepper. It has a more « luxurious » flavour as it still contains all essential oil perfumes.

In a way to keep it green and soft, it should be preserved. Preservation in vinegar is not satisfactory as it spoil flavour, taste and colour of the product, drying have the same consequences.
Green peppercorns CODAL is only preserved in light brine « au naturel » and this process provide a smoother taste..

Green peppercorns , as black pepper, is good for the digestive track, help digestion, it is also rich in iron and antioxydants, with anti-bacterial action on intestines. In cooking and dressing, green peppercorns may take place of the black one, and it is also ornamental on food, due to its green colour.

Softer, tender, smoother than the black pepper, its culinary applications  are more versatile : whole or crushed, it combines perfectly with most dressings and sauces for games, pork or beef meat, fish, crustaceous, etc…  (see recipes). It is also used in food industry for seasoning of mustards, soups, sauces, etc…

Madagascar origin has the benefit to be cultivated in a traditional way, close to the border of the wild Eastern forests of the Island, creeping along on a wild support tree that provide a natural shade….

It is mostly cultivated on small family areas, with vanillia, coffee trees, cinnamon, without use of pesticides or fertilizers ….as it was many years ago !  That is why the
Green peppercorns from Madagascar is generally considered as a reference for this product, usually preferred and recommended by best restaurants and « chefs de cuisine ».

Our plant being close to production areas, we take care to process it within 48 hours after harvesting then, after hand sorting, we do our best to maintain the specifities of typical malagasy quality.

In 1964, green peppercorns was almost not used overseas as it was very difficult to preserve it green for a long transportation time. After various experimentations, CODAL company, under management of its founder M Jacques BRUNOT, settled an original process in a way to preserve  the particular taste of this spice and keeping all flavours of its unripe condition.  In that way, we believe to be among the formers processors of green peppercorns  in brine in the world, maybe the inventors  of this way of processing. Since, we maintained and improved this original way of preservation.
